Fast meal, for when your roommates need to use the kitchen.
Pan fried (badly) some leftover polenta. It held its shape well, but my nonstick pan isn't very non-stick...so yeah, will work on that for next time. I want all the crispy brown bits please. Topped with my leftover bruchetta topping (ended up adding twice what's in the pic, ha), and ate with a side of kale stems, which I dipped in hummus. It's like celery. Deal with it.
Super good, semi-light meal. Definitely satisfied when I didn't want to impose on the roommate space situation.
