166: Potato Pancakes


In theory I followed this recipe, but in actuality something else was going on in my head, as I par boiled the potatoes before grating. They're more like mashed potato pancakes- not a bad thing. I added parsley and a little thyme, fried up the first batch, and for the second added a little more salt (the first were under seasoned) and some smoked paprika.

Really lovely, light and fluffy. These potatoes ate actually from two weeks ago, so I may try this again the legit way, grated raw.
