Chioggia beets are so gorgeous. I semi-followed this recipe from Martha, but didn't have the time/patience to cook the beets until they dried out. A few of the little ones were fairly chippy- and delicious enough that I'll attempt again when I can, but the majority were more like fruit leather. I mean that in the most positive way, though.
It's hard to keep that lovely stripey color, though.
