Leftovers: Beet Ketchup (231) in Action


Thanksgiving leftovers, meet CSA leftovers. Can't see the Beet Ketchup in there? Here you go:


A little goes a long way with this guy. Borrowed some regular bread from the roommate (too tired/lazy to walk someplace decent), a little beet ketchup, kale, turkey and goat cheese.

It was good, but needed a little something.


Version 2.0 at work the next day. The same, but (slightly) better bread and the addition of sweet potato. The ketchup ended up a little too vinegary/clove-y, so the added sweetness helped temper that a bit. I'd probably go a little lighter on it next time, get better bread, and shred the turkey- or at least make thinner slices as opposed to the hunks featured here.


It did help make everything lovely and rainbow colored, though. Leftovers ftw.

237: Beet and Carrot Latkes


One of my more favorite things about beets is how ...bloody they are. Cut up a bunch and it looks like you murdered someone. Make a batch of pickles and dye your onions a lovely shade of pink. And, as I demonstrated with me beet burgers a while back, make the rarest veggie burgers ever. 

So no, those aren't raw meat patties with my eggs, they're beet and carrot latkes, which I made for thanksgivukkah, despite the whole not being Jewish thing.


It was as easy as grating a few medium beets, carrots and an onion, then binding with an egg and some flour, adding salt and pepper to taste. Fry them up in a pan with oil, then let them dry out in a low oven a bit. As always I am impatient and could've stood to leave mine on a little longer to get some color and crispness, but I didn't realize my family was expecting them for breakfast and I was in a rush to get them out.

Totally recommended. Fritter all the things.

232: Moroccan Beet and Squash Stew


I've been interested in Moroccan flavors for a bit- see way back to these recipes. They seen to use a lot of fruit, raisins, and other rich/sweet ingredients, and then an intense heat to balance. It's a pleasing thing now and then, but I'm not sure I could eat it every day. This recipe yielded a lot, though, so I guess I'll be testing that theory this week. 

The flavors of this dish interested me, but the reviews gave me a little pause. There seemed to be an issue with the cooking times of the various ingredients, the beets taking way longer than the squash. So I made some educated guesses! That generally worked! Yay!

I roasted all my beets while doing the beet ketchup. Then I added everything in the order called for in the recipe, except the only head start the beets got was until the water started to simmer. Then I added everything except the chickpeas, which were canned and didn't need a full 40 or whatever minutes to cook through as the recipe called for. 

I checked every 10 minutes, and found that after 20 my squash was almost there, so I added the chickpeas. I let it go another 10 and had to take it off the heat, any longer and the squash would start to fall apart.


Leftovers with some cilantro. My phone doesn't like intense reds, this was really gorgeous IRL.

Next time I'd add the chickpeas at 10 mins, and take the whole thing off closer to 25. I'd also have the correct amount of radishes (I had 1/10th of a lb and went with it). I'm also curious to see how preserved lemon tastes with this- it's stirred in at the end, so I may make a Kalustyan's run this week.

231: Beet Ketchup


I have no idea what I'm going to use this for. I just saw the Saveur recipe and knew I had to make it. I followed the recipe as written- I probably could've used a longer puree (it's on the chunky side), but flavor-wise it's lovely. Were I to make it again, the only difference would be to go a little lighter on the cloves.

(Also! Just noticed it's by the lady behind Food in Jars! No wonder I loved it).

224: Beets and Goat Cheese


Beet islands. 

I'm not entirely sure what that means but that's the random thing I wrote when I put these pictures here to start this post, right before I went to bed, so I'll keep it. Tired Kelly is tired.

Anyway- I had an influx of chioggia beets, and really wanted to do a prep that kept their color. The (semi-failed) beet chips didn't really work, so I tried another option suggested by the internets: steaming. This would've been more successful if I had a mandolin...but I'm hesitant to buy one, after that time I cut off part of my thumb slicing squash. A year later I am still missing a part of my thumb print. Fun facts!


Anyway, my slices were on the thicker side so I had to keep them on the heat longer than I would've liked, and as you can see above they faded during the cooking process. A few days in the fridge made them pinker again (as you can see in the first and last pic), but it's still not that same awesome color I was hoping to preserve.

I was inspired by the flavors (and leftovers!) of that kale and beet salad from the other day, and ate these simply: topped with a little goat cheese, scallions, and black pepper. I ended up sprinkling a little lemon juice on some, which tasted good, but they were fine without.

I'm never sure if some of these presentations I do are nice or dated, but at the very least this was the simplest way to have all the things I wanted to eat together stuck together, so I'm cool with it. The islands above were a bit difficult to eat (though I made less of a mess than I thought I would). Overall I was rather rushed putting these together, so while I ended up with a few pretty looking ones, the vast majority were a mess:

Potatoes - 2 pounds

Kohlrabi - 2

Collards

Lots of extras but here's a curry. A soup with grits. Creamed. Not sure I'd follow the filling but I could use the leaves for a wrap.


Carrots

A few soup ideas: with ginger or a little more plain.



Celeriac

Aka celery root. Smashed, gratin with potatoes, salad with parsley, root veggie slaw.



Potatoes

I can't even...




Beets


Moroccan stew (bonus for radish and excuses to buy squash), beet and radish slaw, or another round of picked beets. Beet ketchup. Borscht.


Radishes

These guys are tiny. White bean and radish salad. Roasted. Savory toast (with yogurt?!).



Garlic

Garlic confit. Honey lemon garlic tea (I'd throw ginger in there, too). Turkish poached eggs with yogurt and spicy sage butter (!!!).




Kohlrabi

Love these guys! "Ceviche" with radishes and carrots. Lots of extras, but crostini with mozz. Pickled with carrots. Nommy looking soup with carrots, potatoes, herbs I have kicking around.

219: Beet and Kale Salad with Goat Cheese


Running around the past two months it's sometimes hard to remember I can actually put something decent together. Especially after some failed dishes. I get home and don't feel like expending a lot of effort on anything beyond taking a bath, drinking ginger tea, and sleeping. I don't have the hours to spend working a meal- sometimes I barely have the mental energy to read a recipe correctly (ha!).

The moment I realized this recipe might turn out well was when all the beets were cut up in the bowl, marinating in the dressing. First of all, it was very pretty, even then. I got 2 lbs of beets from my CSA- a grab bag of red, chioggia, and one golden beet. I boiled the beets and they ended up unpleasantly bitter. Not sure it was the beets or the method of cooking, but next time I'd roast.

Now vinegar is one of my favorite things, and you'd think by now I'd realize, but the acidity totally mellowed out that bitter bite, leaving you to enjoy the earthy sweetness of the beets, the pleasant bitterness of the kale, and the tart creaminess of the goat cheese. And my healthy additions of black pepper.

As I put the salad together I was a little shocked it looked so good.


Honestly, it may be a little too pretty for me.

218: Beet Leather


Chioggia beets are so gorgeous. I semi-followed this recipe from Martha, but didn't have the time/patience to cook the beets until they dried out. A few of the little ones were fairly chippy- and delicious enough that I'll attempt again when I can, but the majority were more like fruit leather. I mean that in the most positive way, though.


It's hard to keep that lovely stripey color, though.

Turnips

Believe it or not, I went for the smaller turnips, hoping to avoid the weird bitterness I had with the last big one. Slaw with carrots and apples. Slaw with carrots (bonus for parsley).



Acorn Squash

Soup with turnips. Soup with turnip chips. Soup with kale and bacon. What? I'm cold.



Popcorn

Note with the popcorn: let dry for three more weeks for best results. Um, thanks? I'll probably wait to bring this home to my parents', where there is a microwave.



Beets

Went for a bag with smaller beets. Salad with ginger. Salad with kale. Beet chips. Salad with potatoes.



Carrots

Boo orange carrots! Here's a slaw with beets (and beet greens, but I could use kale or something).



Potatoes

Ugh, potatoes. Part of me just wanted to swap these guys out for more garlic on the swap table. Here's fritters with turnips. Potato pancakes. Potato pizza dough. Or this potato cake (bonus for parsley).

Salads are tempting, but it's hard for me to turn down an Indian dish.



Chiogga Beets

Will take a picture of this pretties when I actually cook them, but in an effort to save plastic I didn't want to tear open the bag. They have bag of 15 lbs of beets for sale from my CSA. It's bad how tempted I am. Definitely want to preserve the color on these, so will likely use one of these recipes from the kitchn. Here are more raw beet recipes.



Rainbow Carrots

Raw salad to showcase the colors. Roasted with honey ginger butter. Salad with walnuts and radishes.



Potatoes

Roasted (bonus for rainbow carrots).



Radishes

Mango and radish salad. Radish curry. Oh man, maybe I'll actually make this crazy crazy bread.


Romanesco Cauliflower


Really want a recipe that keeps the cauliflower looking pretty, so a roast seems ideal.



Thyme

Roasting herb. Will throw it in where I can. Maybe I'll try drying it out? I can never use these things up in time.


Garlic

Used in other recipes, most likely. Can't afford to be precious.



Dinosaur Kale

All the salads, please. Here's one with balsamic vinegar and pine nuts. One with ricotta. Super simple with breadcrumbs and garlic.
